Cheesy Chicken and Tortellini

Ingredients

  • 2 lb boneless, skinless chicken breasts, cubed
  • 2 tsp Italian seasoning
  • 2 Tbsp butter
  • 1 (24-oz) jar pasta sauce
  • 1 cup chicken broth
  • 2 (9-oz) pkg refrigerated cheese tortellini
  • 1 cup shredded mozzarella cheese

Instructions

  1. Sprinkle chicken with seasoning. Melt butter in a large nonstick skillet over medium-high heat; add chicken, and cook 5 to 6 minutes or until browned.
  2. Stir in pasta sauce and broth; bring to a boil, stir in pasta. Cover, reduce heat, and simmer, stirring occasionally, 5 to 6 minutes or until pasta is tender. Sprinkle with cheese, and let stand 2 minutes or until cheese is melted.

Side Dish Ingredients

  • 1 (9-oz) pkg chopped romaine mix
  • 1 (15-oz) can mandarin oranges, drained
  • 1 Granny Smith apple, chopped
  • ⅓ cup balsamic dressing

Side Dish Instructions

  1. Toss together all ingredients just before serving.
