Sweet, tangy, and fresh, the Strawberry Daiquiri is the platonic ideal for a beach cocktail. This bright red, frosty cocktail is made with strawberries, sugar, limes, and white rum, this cocktail blends fresh fruit flavors with the sweet complexity of rum. Unlike the sugar-laden Strawberry Daiquiri dispensed from the frosty machines behind beach bars and dive bars alike, this recipe leans on fresh fruit and actually comes together in a cocktail shaker instead of a blender. Yes, you read that right, no blender is needed for this Strawberry Daiquiri.

This Strawberry Daiquiri was developed by Chuck A. Rivera Rodriguez of JungleBird, a cocktail bar in San Juan Puerto Rico. It employs a no-cook syrup to infuse an extra punch of lime into the cocktail, for which Rivera Rodriguez macerates lime peels and strawberries with granulated sugar at room temperature. As the fruit and sugar sit, the juices in the fruit release and help dissolve the sugar, resulting in a strawberry-and-lime infused syrup that is made without any use of heat. Since this syrup will yield more than what is needed for the recipe, you can store it in the fridge in an airtight container for up to a week. Add it to smoothies, drizzle it over yogurt, or make a simple cocktail and pair it with your favorite spirit and some seltzer. 

Once you have your syrup made, this drink comes together in minutes. Combine white rum with a bit of the strawberry-lime syrup and freshly squeezed lime juice – from those limes you peeled, of course – in a cocktail shaker. Serve up this drink in a gorgeous coupe glass. Pro tip: this recipe scales up really well for a crowd. You can make multiple drinks in a large cocktail shaker, or even serve this like a punch in a pitcher if you are hosting a party. Mix it up, store it in the fridge and add ice right before serving. Ingredients

  • 3 medium-sized limes

  • 1 pound fresh strawberries, hulled and sliced

  • 2 cups granulated sugar

  • 1 1/2 ounces white rum

  • Fresh strawberry and lime wheel, for garnish

Directions

  1. Using a vegetable peeler, remove green lime peels in strips, being careful to avoid white pith. Place peels in a large bowl. Juice limes, and set aside juice.

  2. Add strawberries and juiced limes to bowl with lime peels. Add sugar, and muddle to crush fruit. Let stand at room temperature, stirring occasionally, until sugar is completely dissolved, about 1 hour. Pour through a fine wire-mesh strainer, and discard solids. (You will have about 1 3/4 cups strawberry mixture.) Store in an airtight container in refrigerator up 1 week.

  3. To make 1 drink, combine white rum, 2 tablespoons reserved lime juice, and 1 1/2 tablespoons strawberry mixture in a cocktail shaker. Fill with ice; cover and shake until well chilled, about 12 seconds. Strain into a coupe glass. Garnish with a lime wheel.
